Chicken Fajitas


 I've been making this for years and years, and still whenever I eat it, I'm like, "Why don't I do this more often?"  It's quick, it doesn't take a lot of ingredients, and it's cheap* and healthy.  And you could totally make it vegetarian with either fake meat or no meat.  And you could totally add more vegetables (zucchini and eggplant would be rad).  

The requirements, as far as I'm concerned, are onions, peppers, and tortillas.  The rest is flexible.

Cut up your veg into somewhat thick slices.


Put in a pan with a tablespoon of hot oil.  Use your "high heat" oil for this.


Pretend you're stir-frying, in the beginning.  Very high heat, lots of stirring.   Then once the veg are starting to change texture and act a little cooked (it'll take the peppers longer than the onions), add  sliced chicken breast (if you're doing that).   We used one breast, two peppers and an onion.


And season it.  Onion, cumin, garlic, cayenne, paprika, black pepper, dash of salt.  Adjust to your taste.  Plenty of spices though.


Add a quarter cup water and stir that around, then leave on medium undisturbed until the water has evaporated.


Then take your tortillas and strategically stack them on top, forming a pseudo-lid for the dinner, while steaming your tortillas.  Use this time to shred cheese.


We only had three tortillas, and we'd each have preferred two fajitas, so we whipped up some quick guacamole to hold us over.  One avocado, dash of salt, squirt of lemon.  Fork.

You could top with sour cream, or yogurt, if you're feeling it.  We just do veg and chicken, cheese and lots of hot sauce.


*it's cheap if you're not running to Trader Joes in the wrong season for million dollar organic peppers.

Simplified Recipe
1 chicken breast, sliced or chunked
2 bell peppers, sliced
1 small or 1/2 large onion, red, white, vidalia, whatever, sliced
1 tsp corn oil or similar
1/4 cup water
2 tablespoons total spices (cayenne, paprika, cumin, onion, garlic, black pepper, etc)
dash of salt
shredded cheddar
hot sauce

Heat the oil to high, add peppers and onions, stir-fry for a few minutes.  
Add chicken and spices and 1/4 cup water, stir and turn to medium
When the water has evaporated and the chicken is cooked through, stir some more, and pile tortillas on top to steam.

Once tortillas have softened, fill with filling and top with cheese and hot sauce.
