This is one of those things that happens in my kitchen on a weeknight when plans have gone out the window. I make a list of things I'm going to cook for the week,but then the milk goes bad or I forget to marinate the whatever.
We needed to use up the last two side servings of that slaw I made, wanted something hot and protein-y and dinner-ish with it.
Find some veg.
Make sauce.
Plus hoisin and rice vinegar.
And garlic.
And OJ.
And red pepper flakes.
Simmer to thicken.
Crisp the seitan in a very hot wok with a bit of oil and soy.
Add veg. Stir fry until just barely cooked. Carrots you almost wouldn't mind biting into.
Add spaghetti. Or lo mein noodles, if you have that. Get the noodles against the wok, in direct contact, let them crisp a bit.
Add sauce.
Stir everything together. Add cornstarch and water mix.
Stir fry all together at least 3-5 minutes.
